Jitsi stack reality
Jitsi Meet has multiple components: Prosody (XMPP signaling), Jicofo (focus), JVB (videobridge for media), and the web frontend. The official docker-jitsi-meet repo bundles everything. Bandwidth and CPU spike during active calls; quiet times are cheap.
Sizing
Small org with up to 25 simultaneous participants across calls: 4 vCPU 8 GB RAM 80 GB NVMe with 1 Gbps uplink. Medium org or community with up to 100 participants: 8 vCPU 16 GB RAM. Larger deployments scale by adding JVB instances. CPU is the binding resource during transcoding-free calls; bandwidth becomes the binding one for high participant counts.

E2EE caveat
Jitsi supports an end-to-end encryption mode for video, but it remains experimental and is not enabled by default. For a fully E2EE-from-day-one solution, consider Element Call (on a Matrix homeserver) or a dedicated SIP+ZRTP setup. Plain Jitsi gives client-to-server TLS, not end-to-end.
