Honest Limitations
Jitsi over Tor works but suffers. WebRTC's UDP-first model fights with Tor's TCP-only transport. Video quality degrades, packet loss climbs, and CPU load on the JVB (Jitsi VideoBridge) increases. For small groups (2 to 5 participants) it is acceptable; beyond that, drop bitrate or accept poor experience.
Configuration
Jitsi components (Prosody for XMPP signaling, JVB for media, web UI) all bound to localhost. Tor onion fronts the HTTPS endpoint. WebSocket signaling routes through Tor; media-plane WebRTC is the bottleneck.
Alternatives
For voice-only over onion, Mumble is dramatically better. For text-and-occasional-video, Matrix with Element calls is more usable. Jitsi on onion is for specific use cases (existing Jitsi familiarity, organizational standardization).
